چکیده | ||
بستهبندی مواد غذایی بهمنظور ایمنی محصولات غذایی و حملونقل آسان با جلوگیری از آلودگی شیمیایی و افزایش عمر مفید که راحتی را برای مصرفکنندگان فراهم میکند، عمل میکند. برای بستهبندی مواد غذایی از انواع مواد مختلف از جمله پلاستیک، شیشه، فلزات و کاغذ و کامپوزیت آنها استفاده میشود. با این حال، با توجه به افزایش آگاهی مصرفکنندگان و اهمیت انتقال مواد مضر از بستهبندی مواد به ماده غذایی نگرانی بیشتری در مورد استفاده از هر نوع ماده بستهبندی وجود دارد. استفاده از روشهای مناسب که ضامن تولید، عرضه و مصرف غذای سالم در طول زنجیره غذا باشد و وجود نظام ایمن و کنترل مؤثر ماده غذایی موجب ارتقا بهداشت، سلامت و افزایش بهرهوری اقتصادی میگردد. در بستهبندی مواد غذایی، ایمنی از اهمیت بسیار زیادی برخوردار است. ایمنی بستهبندی شامل کنترل ورود ترکیبات مضر از بستهبندی به ماده غذایی (پدیده مهاجرت) است. برهمکنش بین بستهبندی-ماده غذایی و نفوذ ترکیبات مهاجر مانند پلاستی سایزرها، پایدارکنندههای حرارتی، آنتیاکسیدانها، حلالها، مونومرها و الیگومرها و آلایندههای حاصل از تجزیه مونومرها، مواد افزودنی و آلایندههای محیطی موجب تغییر ویژگیهای حسی ماده غذایی میگردد. فاکتورهای تأثیرگذار بر مهاجرت شامل ماهیت ماده غذایی، نوع، زمان و دمای تماس، ماهیت ماده بستهبندی، ویژگیهای مواد مهاجر و مقدار آن در بستهبندی است. | ||
