استفاده از چاپگر سه بعدی، به عنوان یک روش جدید در تولید محصولات صنایع غذایی شناخته شده است، به طوری که این فنّاوری، توانایی بالایی برای تولید ساختارهای سه بعدی با هندسههای پیچیده، بافتهای مطلوب و محتوای تغذیهای مناسب را دارد. به همین علت، فنّاوری سه بعدی، نوآوری بزرگی در صنایع غذایی است. چاپگرهای سه بعدی، ماشین آلاتی هستند که میتوانند بر روی یک میز قرار گرفته و اشیای سه بعدی از مواد خام را تولید کنند. این چاپگرها میتوانند تقریباً هر چیزی را تولید کنند. بیشتر چاپگرهای سه بعدی غذا، چاپگرهای رسوبی هستند، بدین معنی که لایههای مواد اولیه در یک فرایند شناخته شده به عنوان ساخت افزایشی(لایه به لایه) روی هم قرار میگیرند. در این مقاله، معرفی مختصری از پیشرفت های اخیر در چاپ سه بعدی مواد غذایی و مواد تشکیل دهنده آن ارایه می گردد که می تواند برای طراحی ماتریس مواد غذایی سه بعدی استفاده شود. همچنین روشهای فرآیند اکستروژن، چاپ جوهرافشان و پخت لیزری انتخابی نیز مورد بررسی قرار گرفتهاند. | ||

The application of 3D printers has been recognized as a new way of producing food industry products, so that the technology has the potential to produce three-dimensional structures with sophisticated geometries, optimal texture and appropriate nutritional contents. For this reason, 3D printing technology is a great innovation in the food industry. 3D technologyis a major innovation in the food industry. 3D printers are bench devices that can produce 3D objects from raw materials. These printers can produce almost anything. Most of the 3D food printers are sedimentary printers, which means that the layers of the raw materialare placed on each other in a known process as an Additive Manufacturing (AM). The main goal of this article is to briefly introduce the recent developments of food printer and its ingredients, which can be used to design the 3D food matrix. Extrusion process methods, inkjet printing, and selective laser sintering have also been studied. | ||
